Freeze-drying works by freezing the ingredients and then reducing the surrounding pressure which turns any moisture to gas. Without moisture, the veggies and meats can be stored at room temperature and don’t need to be in the fridge. When water is added back in, the flavours, smells and textures haven’t changed and importantly the goodness is still there!
